- 1 sheet puff pastry thawed
- 6 ounces Brie cheese cut into 12 small cubes
- ½ cup cranberry sauce homemade or store-bought
- 1 egg beaten egg for egg wash
- 1 tablespoon fresh rosemary chopped, optional for garnish
- salt and pepper to taste, optional
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the thawed puff pastry on a lightly floured surface until it is about ⅛ inch thick.
Cut the puff pastry into 3-inch squares (approximately 12 squares).
Place a cube of Brie cheese in the center of each puff pastry square.
Top each piece of Brie with about 1 tablespoon of cranberry sauce.
Fold the corners of the puff pastry squares over the filling to create a pocket, pinching the edges to seal.
Place the filled pastries on the prepared baking sheet. If desired, brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 15-20 minutes or until the pastries are golden brown and puffed.
Remove from the oven and let cool slightly before garnishing with chopped rosemary, if using.
Serve warm and enjoy!
You could substitute the cranberry sauce with other toppings like fig jam or apple chutney for different flavor profiles.
For a vegan option, use vegan cheese and carefully check the puff pastry ingredients for dairy content.
