Ingredients
  

  • 1 sheet puff pastry thawed
  • 6 ounces Brie cheese cut into 12 small cubes
  • ½ cup cranberry sauce homemade or store-bought
  • 1 egg beaten egg for egg wash
  • 1 tablespoon fresh rosemary chopped, optional for garnish
  • salt and pepper to taste, optional

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the thawed puff pastry on a lightly floured surface until it is about ⅛ inch thick.
  • Cut the puff pastry into 3-inch squares (approximately 12 squares).
  • Place a cube of Brie cheese in the center of each puff pastry square.
  • Top each piece of Brie with about 1 tablespoon of cranberry sauce.
  • Fold the corners of the puff pastry squares over the filling to create a pocket, pinching the edges to seal.
  • Place the filled pastries on the prepared baking sheet. If desired, brush the tops with the beaten egg for a golden finish.
  • Bake in the preheated oven for 15-20 minutes or until the pastries are golden brown and puffed.
  • Remove from the oven and let cool slightly before garnishing with chopped rosemary, if using.
  • Serve warm and enjoy!

Notes

You could substitute the cranberry sauce with other toppings like fig jam or apple chutney for different flavor profiles.
For a vegan option, use vegan cheese and carefully check the puff pastry ingredients for dairy content.
