Equipment

  • 1 baking sheet
  • 1 parchment paper
  • 1 rolling pin optional
  • 1 medium mixing bowl
  • 1 oven

Ingredients
  

  • 1 sheet puff pastry Thawed.
  • 1 cup cranberry sauce Store-bought or homemade.
  • 6 ounces brie cheese
  • 1 each egg Beaten for egg wash.
  • 1 tablespoon fresh rosemary Optional, finely chopped.
  • salt To taste.
  • pepper To taste.

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into 3-inch squares.
  • Place about a teaspoon of cranberry sauce in the center of each pastry square.
  • Cut the brie cheese into small pieces and place a piece on top of the cranberry sauce. If using, sprinkle the rosemary on top.
  • Fold the corners of the pastry squares over the filling and pinch to seal, creating little pockets.
  • Place the filled bites on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden color when baked.
  • Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
  • Remove from the oven and let cool slightly before serving.

Notes

You can use store-bought cranberry sauce or make your own for a fresher flavor.
These can be made ahead of time, assembled, and then frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
Experiment with other toppings such as chopped nuts or a sprinkle of brown sugar for added sweetness.
