Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup dried cranberries, chopped
  • ¼ cup finely chopped green onions
  • ¼ cup chopped pecans or walnuts
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (optional)
  • to taste salt and pepper
  • additional chopped nuts for coating (if desired)

Instructions
 

  • In a mixing bowl, combine softened cream cheese and shredded cheddar cheese. Mix with a spatula or spoon until well blended.
  • Add chopped dried cranberries, green onions, chopped nuts, garlic powder, thyme (if using), and season with salt and pepper. Mix until all ingredients are thoroughly combined.
  • Shape the cheese mixture into a ball using your hands. Wrap it tightly in plastic wrap and refrigerate for at least 2 hours or until firm.
  • Once chilled, remove the cheese ball from the refrigerator and unwrap it. If desired, roll the cheese ball in additional chopped nuts to coat the outside.
  • Transfer the cheese ball to a serving platter or cheese board. Serve with an assortment of crackers, fresh fruit, or veggies.

Notes

You can make this cheese ball a day ahead and let it sit in the refrigerator for a more developed flavor.
Feel free to customize the recipe by adding herbs or spices according to your taste preferences.
