- 12 oz fresh or frozen cranberries If using frozen, thaw and drain.
- 1 cup granulated sugar
- 1 cup mini marshmallows
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple Drained.
- ½ cup chopped pecans or walnuts Optional.
In a mixing bowl, combine the cranberries and granulated sugar. Allow the mixture to sit for about 10 minutes to let the cranberries release some of their juices.
In another bowl, whip the heavy cream with an electric mixer on medium speed until soft peaks form. Add the vanilla extract and mix until combined.
Gently fold the cranberry mixture, mini marshmallows, drained crushed pineapple, and nuts (if using) into the whipped cream until well combined. Be careful not to deflate the whipped cream too much.
Transfer the cranberry fluff to a serving dish or individual cups. Smooth the top with a rubber spatula.
