Ingredients
  

  • 2 cups fresh cranberries
  • ½ cup granulated sugar
  • ¼ cup water
  • 1 cup chopped celery
  • ½ cup diced apples
  • ½ cup chopped walnuts
  • ½ cup mayonnaise For a lighter version, substitute Greek yogurt.
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice
  • ¼ cup raisins Optional.

Instructions
 

  • In a saucepan, combine the fresh cranberries, sugar, and water. Bring to a boil over medium heat.
  • Reduce heat and simmer for about 10 minutes, or until the cranberries burst. Remove from heat and let cool completely.
  • In a mixing bowl, combine the chopped celery, diced apples, walnuts, and optional raisins.
  • Once the cranberry mixture has cooled, fold it into the mixing bowl with the other ingredients.
  • In a separate small bowl, whisk together the mayonnaise, salt, black pepper, and lemon juice until smooth.
  • Pour the dressing over the cranberry mixture and gently toss to combine until all ingredients are well coated.
  • Transfer the salad to a serving dish and refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise.
This salad can be made a day ahead; just keep it refrigerated until serving.
You can add other nuts or dried fruits based on your preference.
