Ingredients
  

  • 1 cup cranberry juice
  • 1 cup water
  • 1 package (3 ounces) cherry Jello (or your preferred flavor) Different flavors can be used.
  • 2 cups fresh cranberries Or 1 can of whole berry cranberry sauce.
  • 1 cup chopped walnuts Optional.
  • 1 cup mini marshmallows
  • 1 cup diced apples
  • 1 cup whipped cream For topping.

Instructions
 

  • In a medium saucepan, combine the cranberry juice and water, and bring to a boil over medium heat.
  • Once boiling, remove the pan from heat and whisk in the cherry Jello until fully dissolved.
  • Allow the mixture to cool slightly; then stir in the fresh cranberries (or canned cranberry sauce), walnuts (if using), mini marshmallows, and diced apples.
  • Pour the mixture into a refrigerator-safe serving dish.
  • Cover and refrigerate for at least 2 hours, or until the salad is firm and set.
  • Before serving, top the salad with whipped cream if desired.

Notes

You can use different flavors of Jello to change the taste and color of the salad.
This salad can be prepared a day in advance, making it a great option for holiday meals.
For a healthier version, you might want to reduce the amount of sugar in the Jello or use a sugar-free alternative.
