Ingredients
  

  • 12 oz fresh cranberries About 3 cups.
  • 1 cup diced red onion
  • 1 whole jalapeño pepper Seeded and finely chopped.
  • ½ cup fresh cilantro Chopped.
  • 2 whole limes Juiced.
  • ¼ cup honey or maple syrup Adjust to taste.

Instructions
 

  • Rinse the cranberries under cold water and remove any that are damaged or soft.
  • In a mixing bowl, combine the fresh cranberries, diced red onion, and jalapeño pepper.
  • Add the chopped cilantro to the bowl.
  • Squeeze the juice of the limes over the mixture.
  • Drizzle in the honey or maple syrup, and sprinkle with salt.
  • Use a spoon to gently mix all ingredients together until well combined. If desired, you can pulse the mixture a few times in a food processor for a finer texture.
  • Taste and adjust sweetness or salt as needed.
  • Let the salsa sit for at least 10 minutes at room temperature to allow the flavors to meld. Serve chilled or at room temperature.

Notes

This cranberry salsa can be made a day in advance. Store it in an airtight container in the refrigerator to enhance the flavors.
