  • 2 cups cooked chicken, shredded tender
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ¼ cup diced green chilies gentle kick
  • ½ cup chopped onions
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 8 small flour tortillas
  • as needed cooking spray or oil to keep tortillas golden

  • Preheat your oven to 350 degrees Fahrenheit to prepare for baking the tacos.
  • In a bowl, combine shredded chicken, cream cheese, shredded cheddar, diced green chilies, chopped onions, garlic powder, cumin, and chili powder. Mix well until combined.
  • Spoon the chicken mixture evenly onto each tortilla, pack tightly and roll up snugly to keep filling inside.
  • Spray or grease a baking dish and place the rolled tortillas seam side down to hold their shape while cooking.
  • Lightly spray or drizzle oil over the top of the rolled tortillas to achieve a golden, crisp top.
  • Bake in the preheated oven for 20 to 25 minutes until edges turn golden and filling is heated through. Serve warm.

Notes

Use pre-cooked rotisserie chicken for convenience. Cream cheese whipped version can speed mixing. Store leftovers tightly wrapped or freeze for later.
