- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 2 cups cooked chicken, shredded
- 2 cups corn (fresh, frozen, or canned)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- for garnish fresh parsley optional
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes until the vegetables soften.
Add the shredded chicken, corn, chicken broth, salt, pepper, and thyme to the pot. Bring to a boil, then reduce the heat and let simmer for about 15 minutes.
For a creamier texture, you can blend half of the soup in a blender and return it to the pot, or use an immersion blender directly in the pot.
Stir in the heavy cream and simmer for another 5 minutes until heated through. Adjust salt and pepper to taste.
Ladle the soup into bowls and garnish with fresh parsley if desired.
