  • 2 tablespoons olive oil or sundried tomato oil
  • 1 pound chicken breast cut into ¾ – 1 inch pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • cup sundried tomatoes chopped
  • ½ cup Parmesan cheese grated
  • 2 cups baby spinach leaves

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and sprinkle with Italian seasoning, salt, and pepper. Cook 5–7 minutes until golden and cooked through. Remove chicken and set aside.
  • Melt butter in the same skillet and add minced garlic. Sauté for 30 seconds.
  • Add chicken stock and heavy cream. Stir and bring to a simmer.
  • Add gnocchi, cover and cook for 4–5 minutes until tender and sauce thickens.
  • Stir in smoked paprika, sundried tomatoes, and Parmesan cheese.
  • Add spinach and stir again until wilted.
  • Return chicken to pan and let everything simmer another 2–3 minutes before serving.

Notes

This dish pairs well with dry white wine. Use sundried tomato oil for added flavor.
