Ingredients
  

  • 3 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 2 cups broccoli florets
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Plus additional for topping
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none salt
  • to taste none pepper
  • ½ cup breadcrumbs Optional for topping

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cooked rice, broccoli, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  • Transfer the chicken and rice mixture into a greased 9x13 inch baking dish. Spread it evenly.
  • Sprinkle 1 cup of shredded cheddar cheese on top of the mixture. If using, add breadcrumbs for extra crunch.
  • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Remove the casserole from the oven and let it cool for a few minutes before serving.

Notes

Feel free to add other vegetables like bell peppers or carrots for added nutrition.
This casserole can be prepared ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated as needed.
