  • 1 tablespoon olive oil
  • 12 oz spicy Italian chicken sausage sliced
  • 6 cloves garlic minced
  • 1 cup orzo dry
  • 2 cups low sodium chicken broth
  • ¼ cup full-fat canned coconut milk or heavy cream
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 teaspoon fresh or dried thyme
  • ½ cup freshly grated parmesan cheese
  • 2 cups baby spinach leaves

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced sausage and brown for 5–7 minutes.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Stir in dry orzo to coat with oil and sausage drippings.
  • Pour in chicken broth, bring to a boil, then reduce heat and cover.
  • Cook 10 minutes covered until orzo is tender and liquid mostly absorbed.
  • Remove lid after natural pressure release. Stir in coconut milk or cream, soy sauce, onion powder, red pepper flakes, and black pepper. Simmer uncovered 5 minutes.
  • Turn off heat. Add spinach and parmesan, stir gently to combine and wilt leaves.
  • Let rest a few minutes before serving warm.

Notes

Let leftovers cool and store in airtight containers in the fridge for up to 3 days or freezer for 1 month. Reheat slowly with broth to retain creaminess.
