  • 1 tablespoon olive oil
  • 12 oz spicy Italian chicken sausage sliced
  • 6 cloves garlic minced
  • 1 cup orzo dry
  • 2 cups low sodium chicken broth
  • ¼ cup full-fat canned coconut milk or heavy cream
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 teaspoon thyme fresh or dried
  • ½ cup freshly grated parmesan cheese
  • 2 cups baby spinach leaves

  • Heat olive oil in a pressure cooker-safe skillet over medium heat. Add the chicken sausage and brown it for 5-6 minutes.
  • Add minced garlic and sauté for about 1 minute until fragrant. Do not burn.
  • Stir in the dry orzo and toast for 1-2 minutes, stirring frequently.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat to simmer and cook uncovered, stirring occasionally, until orzo is tender and most liquid is absorbed (about 10-12 minutes).
  • Mix in coconut milk or cream, soy sauce, onion powder, red pepper flakes, and black pepper. Cook 2-3 more minutes.
  • Taste and adjust seasoning with additional salt or pepper if needed.
  • Sprinkle in parmesan cheese and stir in baby spinach until wilted.
  • Serve warm and enjoy!

Notes

Tweak this recipe by swapping meat for plant-based alternatives or adding leftover veggies. Store leftovers up to 3 days in fridge or freeze for longer. Reheat with splash of broth to restore creaminess.
