This Creamy Chicken Sausage Orzo Skillet is a flavorful one-pan dish made with spicy chicken sausage, orzo, spinach, and Parmesan all in a rich, creamy sauce in just 25 minutes.
Heat olive oil in a pressure cooker-safe skillet over medium heat. Add the chicken sausage and brown it for 5-6 minutes.
Add minced garlic and sauté for about 1 minute until fragrant. Do not burn.
Stir in the dry orzo and toast for 1-2 minutes, stirring frequently.
Pour in the chicken broth and bring to a boil.
Reduce heat to simmer and cook uncovered, stirring occasionally, until orzo is tender and most liquid is absorbed (about 10-12 minutes).
Mix in coconut milk or cream, soy sauce, onion powder, red pepper flakes, and black pepper. Cook 2-3 more minutes.
Taste and adjust seasoning with additional salt or pepper if needed.
Sprinkle in parmesan cheese and stir in baby spinach until wilted.
Serve warm and enjoy!
