1 large skillet
1 measuring cups and spoons
1 wooden spoon or spatula
1 cutting board
1 plate for cooked chicken
- 4 pieces boneless, skinless chicken breasts About 1.5 lb total.
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- to taste salt
- to taste pepper
- 1 cup heavy cream For a lighter version, use half-and-half.
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- ½ cup sun-dried tomatoes Chopped.
- 1 tablespoon fresh basil Chopped, for garnish.
Begin by seasoning the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and place it on a plate.
In the same skillet, reduce the heat to low and add the heavy cream. Stir continuously to prevent burning.
Gradually whisk in the grated Parmesan cheese until smooth, creating a creamy sauce.
Add the spinach and sun-dried tomatoes to the sauce, stirring to combine. Cook for 2-3 minutes until the spinach has wilted.
Return the cooked chicken to the skillet, spooning some of the sauce over the top, and cook for an additional 2-3 minutes to heat through.
Serve the creamy chicken with sauce on top and garnish with fresh chopped basil.
For a lighter version, you can use half-and-half instead of heavy cream.
This dish pairs wonderfully with pasta, rice, or a side of steamed vegetables.
