Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lb total.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 cup heavy cream For a lighter version, use half-and-half.
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach
  • ½ cup sun-dried tomatoes Chopped.
  • 1 tablespoon fresh basil Chopped, for garnish.

Instructions
 

  • Begin by seasoning the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  • Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and place it on a plate.
  • In the same skillet, reduce the heat to low and add the heavy cream. Stir continuously to prevent burning.
  • Gradually whisk in the grated Parmesan cheese until smooth, creating a creamy sauce.
  • Add the spinach and sun-dried tomatoes to the sauce, stirring to combine. Cook for 2-3 minutes until the spinach has wilted.
  • Return the cooked chicken to the skillet, spooning some of the sauce over the top, and cook for an additional 2-3 minutes to heat through.
  • Serve the creamy chicken with sauce on top and garnish with fresh chopped basil.

Notes

For a lighter version, you can use half-and-half instead of heavy cream.
This dish pairs wonderfully with pasta, rice, or a side of steamed vegetables.
