Ingredients
  

  • 6 breasts boneless, skinless chicken About 1.5 pounds.
  • 1 cup heavy cream (240 ml)
  • 1 can diced tomatoes, undrained (14.5 oz, 410 g)
  • 1 packet Italian seasoning mix (0.7 oz)
  • 1 cup chicken broth (240 ml)
  • 1 tablespoon garlic, minced
  • 1 cup grated Parmesan cheese (100 g)
  • Salt To taste.
  • Pepper To taste.
  • Fresh parsley For garnish (optional).

Instructions
 

  • Place the chicken breasts at the bottom of the crockpot. Ensure they are evenly spaced.
  • In a separate bowl, mix the diced tomatoes (with juices), Italian seasoning, chicken broth, minced garlic, salt, and pepper.
  • Pour the tomato mixture over the chicken in the crockpot, ensuring all pieces are covered.
  • Cover the crockpot with its lid and cook on low for 6 hours or until the chicken is cooked through and tender.
  • Once cooked, carefully shred the chicken with two forks while it's still in the crockpot.
  • Stir in the heavy cream and grated Parmesan cheese until combined and creamy.
  • Allow it to cook for an additional 15 minutes with the lid on for the cheese to melt thoroughly.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Serve the creamy Italian chicken over pasta or rice for a complete meal.
You can add vegetables such as spinach or bell peppers to the crockpot for added flavor and nutrition.
For a lighter version, use half-and-half instead of heavy cream.
