- 1 pound Italian sausage Preferably mild.
- 1 medium onion Diced.
- 3 cloves garlic Minced.
- 2 medium carrots Diced.
- 2 stalks celery Diced.
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt To taste.
- ½ teaspoon black pepper To taste.
- 2 cups fresh spinach
- 1 cup diced tomatoes Canned or fresh.
- 1 tablespoon olive oil
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and cook for about 3-4 minutes, until they are translucent.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Remove the sausage from its casing and add it to the pot. Use a wooden spoon to break the sausage into small pieces. Cook until browned and cooked through, about 5-7 minutes.
Stir in the diced carrots and celery, and cook for an additional 5 minutes until the vegetables start to soften.
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and add the diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes.
Slowly pour in the heavy cream, stirring to combine. Bring the soup back to a gentle simmer.
Add the grated Parmesan cheese and stir until melted and well incorporated.
Finally, stir in the fresh spinach and cook for 2-3 minutes until wilted.
