- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup frozen corn
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon olive oil
- optional chopped green onions for garnish
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until soft and translucent.
Add the minced garlic to the pot and cook for an additional minute until fragrant.
Increase the heat to medium-high, then add the ground beef. Cook until browned and cooked through, breaking it up with a wooden spoon as it cooks.
Once the beef is browned, drain any excess fat, and then add the diced potatoes and beef broth to the pot. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the potatoes are tender.
Once the potatoes are cooked, stir in the heavy cream, frozen corn, salt, black pepper, and paprika. Cook for an additional 5 minutes to heat through.
Taste and adjust the seasoning if needed. Serve hot, garnished with chopped green onions if desired.
