In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
Add the minced garlic and sauté for an additional minute until fragrant.
Stir in the diced sweet potatoes, vegetable broth, ground ginger, and ground cumin. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
Remove the pot from the heat. Use an immersion blender to puree the soup until it is smooth. Alternatively, you can carefully transfer the soup in batches to a blender to puree.
Once smooth, return the soup to the pot (if using a blender) and stir in the coconut milk. Warm the soup over low heat until heated through. Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro or parsley if desired.
For added flavor, you can sauté some spices like paprika or curry powder along with the onion.
If you prefer a spicier kick, consider adding a pinch of cayenne pepper or some red pepper flakes.
This soup can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat before serving.
