Start by washing and drying the zucchinis. Use a vegetable peeler to remove a thin layer of the skin if desired, then slice the zucchinis into ¼-inch thick rounds.
In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs (if using), garlic powder, onion powder, paprika, salt, and black pepper.
Add the zucchini slices to the bowl and drizzle the olive oil over them. Toss until the zucchini is evenly coated with the oil and the cheese mixture.
Preheat the air fryer to 375°F (190°C) for about 3-5 minutes.
Arrange the zucchini slices in a single layer in the air fryer basket. You may need to work in batches, depending on the size of your air fryer.
Cook the zucchini chips in the air fryer for 12-15 minutes, shaking the basket halfway through, until they are golden brown and crispy.
Once cooked, remove the zucchini chips from the air fryer and let them cool slightly on a plate or baking sheet. Serve immediately for the best texture.
