  • 1 pound ground beef juicy meaty base
  • 1 small white onion small diced
  • 3 cloves garlic minced
  • 2 tablespoons taco seasoning vibrant and bold
  • 3 tablespoons tomato paste thick and rich
  • 1 4-ounce can diced green chiles mild heat
  • 1 teaspoon salt to taste
  • 1 can refried beans creamy and smooth
  • grain-free tortillas like cassava flour
  • avocado or olive oil spray for crisping

  • Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  • Heat a skillet over medium heat. Add ground beef and diced onion. Sauté until beef browns and onions soften (7–8 minutes).
  • Add garlic, taco seasoning, tomato paste, diced green chiles, and salt. Stir and cook for another 2–3 minutes.
  • Add the refried beans and cook the mixture for another 2–3 minutes until warmed through. Remove from heat.
  • Warm the tortillas slightly so they're pliable.
  • Place tortillas on the sheet. Spread bean and beef mix on one half, fold over to close.
  • Spray the tops with avocado or olive oil spray.
  • Bake in preheated oven for 15–20 minutes, flipping halfway through for even crisping.
  • Serve hot topped with lettuce, tomatoes, cilantro, or jalapeño crema.

Notes

For jalapeño crema, blend 2 jalapeños (seeds removed), 2 small avocados, juice of 1 lime, and 1 teaspoon salt. Add water to thin as needed.
