Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Heat a skillet over medium heat. Add ground beef and diced onion. Sauté until beef browns and onions soften (7–8 minutes).
Add garlic, taco seasoning, tomato paste, diced green chiles, and salt. Stir and cook for another 2–3 minutes.
Add the refried beans and cook the mixture for another 2–3 minutes until warmed through. Remove from heat.
Warm the tortillas slightly so they're pliable.
Place tortillas on the sheet. Spread bean and beef mix on one half, fold over to close.
Spray the tops with avocado or olive oil spray.
Bake in preheated oven for 15–20 minutes, flipping halfway through for even crisping.
Serve hot topped with lettuce, tomatoes, cilantro, or jalapeño crema.
Notes
For jalapeño crema, blend 2 jalapeños (seeds removed), 2 small avocados, juice of 1 lime, and 1 teaspoon salt. Add water to thin as needed.
