  • 8 oz Sharp cheddar cheese grated
  • 2 sticks Butter room temperature
  • 2 cups Flour all-purpose
  • 1 teaspoon Salt
  • 0.5 teaspoon Cayenne pepper
  • 2 cups Rice Krispies
  • Flaky sea salt for sprinkling

  • Preheat oven to 375ºF. Line baking sheets with parchment paper.
  • Cream together butter and grated sharp cheddar cheese until well combined.
  • Whisk together flour, salt, and cayenne pepper. Add to cheese mixture and mix until thoroughly combined.
  • Fold in Rice Krispies gently to preserve their crunch.
  • Use a small cookie scoop or roll dough into small balls (about 2 teaspoons worth).
  • Flatten each ball lightly with the bottom of a glass dipped in flour.
  • Sprinkle each flattened ball with flaky sea salt.
  • Bake for 8-10 minutes or until bottoms are slightly brown and edges are crispy.
  • Let cool on the sheet for 5 minutes, then transfer to a wire rack to finish cooling.

Notes

Use freshly grated sharp cheddar for the best flavor and texture. To keep the flattening glass from sticking, dip it in flour. Add extra paprika or cayenne for additional heat on select wafers. Look for the golden brown underside to ensure doneness.
