  • 1 lb chicken thighs boneless and skinless, cut into bite-sized pieces
  • ½ cup cornstarch
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 inch piece ginger grated
  • 1 small red chili thinly sliced (optional)
  • 2 green onions chopped
  • 2 tablespoon vegetable oil

  • Toss your chicken bites into a bowl. Add soy sauce and a pinch of salt. Let it marinate for about 10 minutes.
  • Dust each piece of chicken with cornstarch, ensuring even coating.
  • Heat vegetable oil in a skillet over medium-high. Fry chicken in batches, about 5 to 6 minutes each, until golden brown and crispy. Then set aside.
  • In the same skillet, sauté garlic, ginger, and chili slices for 1–2 minutes until aromatic.
  • Return the chicken to the skillet and toss with aromatics to combine.
  • Season with extra salt and pepper to taste if desired.
  • Garnish with chopped green onions.
  • Serve hot and enjoy.

Notes

For extra crispiness, make sure the chicken isn't crowded in the pan during frying. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for 2 months.
