  • 1 16 oz. can black beans drained
  • 1 16 oz. can kidney beans drained
  • 2 garlic cloves minced
  • 1 medium onion chopped
  • 1 jalapeno pepper minced
  • 1 green bell pepper chopped
  • 10 oz. package frozen corn kernels about 1 ¼ cups
  • 1 8 oz. can tomato sauce
  • 1 28 oz. can diced tomatoes drained
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • 2 boneless, skinless chicken breasts uncooked
  • ¼ cup chopped fresh cilantro
  • Extras for topping shredded cheese, chopped scallions, red onion, sour cream, more cilantro

  • First, drop the black beans and kidney beans into the crock pot. These trusty staples bring the chili heartiness you want.
  • Throw in the minced garlic and chopped onion along with that spicy jalapeno and green bell pepper. Your kitchen will start smelling right away.
  • Next, toss in the frozen corn kernels, tomato sauce, and drained diced tomatoes. Stir it up a bit so things get friendly.
  • Sprinkle the cumin, chili powder, dried oregano, salt, and freshly ground pepper over everything. Stir it good till the spices spread and mix.
    Place the two boneless, skinless chicken breasts right on top of the mix. Don’t stir 'em in just yet, just let them chill on top.
    Lock the pressure cooker lid on with the sealing ring in place. Set it to cook on high pressure for about 15 minutes. When done, do a slow release to keep the chicken juicy and perfect.
    Open the lid, then shred the tender pull chicken right inside the pot using two forks. Stir in ¼ cup chopped fresh cilantro for a fresh hit of flavor. Serve with whatever toppings you like and enjoy immediately.

Notes

If you don’t have a slow cooker, you can also use an oven safe, 5 ½ quart or larger pot. Simmer at 350 degrees, stirring occasionally, for 3 hours. Enjoy!
