- 2 lbs boneless, skinless chicken breasts
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups baby spinach

Place the chicken breasts in the bottom of the crock pot.
Add the diced onion, minced garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and black pepper over the chicken. Stir gently to mix.
Cover and cook on low for 6 hours.
After 6 hours, remove the chicken breasts from the crock pot and shred them with two forks. Return the shredded chicken back to the soup.
Stir in the heavy cream and grated Parmesan cheese until well combined. Allow to heat for an additional 15-20 minutes on low.
Add in the baby spinach and cook until wilted, about 3-5 minutes.
Serve hot, garnished with fresh parsley, and enjoy with crusty bread if desired.
For a thicker soup, you can use less chicken broth or add a cornstarch slurry at the end.
