Start by preparing the chicken. Remove any giblets from the cavity and pat the chicken dry with paper towels.
In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, thyme, rosemary, and cayenne pepper. Mix well to create a spice rub.
If desired, rub the chicken with olive oil for extra flavor and moisture. Then, generously apply the spice rub all over the chicken, making sure to coat the entire surface and inside the cavity.
Place the seasoned chicken into the Crock Pot, breast side up.
Cover the Crock Pot with the lid and cook on low for 8 hours. If you prefer to cook it on high, set the timer for 4-5 hours.
Once the cooking time is complete, carefully remove the chicken from the Crock Pot and let it rest for about 10 minutes before cutting.
Serve the chicken as is, or shred it for use in other dishes such as salads, tacos, or sandwiches.
