Place the chicken chunks in the bottom of your crock pot.
Add the chopped red pepper and pineapple chunks with juice.
In a bowl, whisk together soy sauce, BBQ sauce, brown sugar, orange juice, sesame oil, rice vinegar, minced garlic, and grated ginger.
Pour sauce mixture over contents in crock pot. Cover tightly.
Cook on low for 4-5 hours or high for 2-3 hours.
When timer beeps, do quick or natural release. Stir gently.
Serve hot over rice or noodles. Garnish with green onions and sesame seeds if using.

Store leftovers in airtight containers for up to 4 days in fridge or freeze for longer storage.
