  • 0.5 small yellow onion chopped fine so it blends well
  • 0.5 pound ground beef brown it up first for good flavor
  • 1 can petite diced tomatoes with liquid
  • 1 can black beans with liquid adds some hearty texture
  • 1 can beef broth for that rich meaty base
  • 0.5 cup tomato sauce to thicken and give a tangy touch
  • 1 can chopped green chiles mild heat and a nice kick
  • 0.5 cup frozen corn for a little sweet crunch in every bite
  • 1 tablespoon taco seasoning to bring the Mexican-inspired zest
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper

Optional Garnish

  • chopped red onion
  • cilantro
  • lime wedges
  • shredded pepper jack or Monterey jack cheese

Instructions

  • Heat large skillet over medium-high heat. Add onion and beef; cook 8 to 10 minutes or until beef is browned, breaking up meat with side of spoon and stirring occasionally.
  • Drain excess fat from beef mixture.
  • Add diced tomatoes, black beans, broth, tomato sauce, green chiles, corn and taco seasoning mix to bowl of 5-quart slow cooker.
  • Transfer beef mixture to slow cooker; stir well. Cover and cook on high 4 hours or low 8 hours.
  • Serve soup topped with onion, cilantro, lime wedges, cheese, sour cream and/or tortilla chips.
  • Enjoy your cozy bowl of crock pot taco soup!
