Ingredients
  

  • 1.5 lbs ground beef (80% lean)
  • 1 cup breadcrumbs
  • ½ cup milk
  • ½ cup onion, finely chopped
  • 2 large eggs
  • 2 cloves garlic, minced
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon mustard (yellow or Dijon)
  • ½ cup brown sugar, packed
  • ¼ cup ketchup (for glaze)

Instructions
 

  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, finely chopped onion, eggs, minced garlic, ¼ cup ketchup, Worcestershire sauce, salt, black pepper, and mustard. Mix until just combined, being careful not to overmix.
  • Shape the meat mixture into a loaf shape that will fit inside your crockpot.
  • In a small bowl, mix together the brown sugar and ¼ cup ketchup to form the glaze.
  • Place the meatloaf into the crockpot and pour the glaze evenly over the top.
  • Cover the crockpot and set it on low. Cook for 6 hours or until the internal temperature reaches 160°F (70°C).
  • Once cooked, carefully remove the meatloaf from the crockpot using two spatulas and let it rest for about 10 minutes before slicing.

Notes

Serve the meatloaf with mashed potatoes or steamed vegetables for a complete meal.
Leftover meatloaf can be stored in the refrigerator for up to 3 days.
Feel free to customize the meatloaf by adding herbs or spices of your choice, such as Italian seasoning or thyme.
This meatloaf can also be cooked on high for about 3 hours if you're short on time.
