  • 2 tablespoon Cajun seasoning blend
  • 2 Boneless, skinless chicken breasts about 1.5 pounds
  • 0.5 cup Chicken stock
  • 2 shakes Hot sauce like Texas Pete
  • 1 Onion diced
  • 2 cups Mini bell peppers sliced into rounds
  • 2 cups Heavy cream
  • 0.75 cup Parmesan cheese divided
  • 1 pound Fettuccine pasta or your favorite long noodle
  • 2 teaspoon Dried parsley

Instructions

  • Season chicken breasts with Cajun seasoning on both sides.
  • Place chicken in crockpot, layer diced onions and mini bell peppers on top.
  • Pour chicken stock and hot sauce over contents in crockpot.
  • Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours until chicken is tender.
  • Shred cooked chicken with forks and return to crockpot.
  • Stir in heavy cream, half cup parmesan cheese, and dried parsley.
  • Cook pasta al dente, drain well.
  • Add pasta to crockpot mixture and stir to combine.
  • Top with remaining parmesan cheese before serving.

Notes

Store leftovers in airtight containers for up to 4 days or freeze for longer storage. Reheat gently to keep sauce creamy.
