Place the seasoned chicken thighs at the bottom of the crockpot.
Pour the creamy mixture over the chicken evenly.
In a separate bowl, combine the stuffing mix, chopped onion, chopped celery, and dried thyme. Sprinkle this mixture evenly on top of the chicken and sauce in the crockpot.
Cover the crockpot with the lid and cook on low for 6 hours, or until the chicken is cooked through and tender.
Once cooked, carefully shred the chicken within the crockpot and stir it gently into the stuffing to combine.
