Place the boneless, skinless chicken breasts at the bottom of the crockpot.
In a separate bowl, mix together the honey, soy sauce, minced garlic, rice vinegar, ground ginger, black pepper, and salt. Stir until well combined.
Pour the honey garlic sauce over the chicken breasts in the crockpot, ensuring they are fully coated.
Cover the crockpot and cook on low for about 4 hours, or until the chicken is cooked through and tender.
If you’d like a thicker sauce, mix the cornstarch with the water in a small bowl until smooth, then add to the crockpot during the last 30 minutes of cooking. Stir well.
Once cooked, shred the chicken directly in the sauce using two forks or leave it whole for serving.
Serve hot with rice or your choice of sides.
