Crustless Spinach and Feta Quiche and More Pressure Cooker Goodness
This crustless spinach and feta quiche is a comforting, low-carb dish packed with garlic, onions, Parmesan, and creamy feta — perfect made in a pressure cooker or regular oven!
2bunchesfresh spinachwashed and trimmed from stems
3ozfetacrumbled
3clovesgarlicminced
½ to 1tablespoonolive oil
½small white oniondiced
5eggs
⅔cup2% milk
2tablespoonsParmesan cheeseshredded
1teaspoonkosher salt

Preheat the oven to 375°F and grease a pie dish or 9-inch baking dish with butter or spray.
Heat olive oil in a skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
Add minced garlic and cook for 1-2 minutes.
Add spinach and stir until wilted, about 2-3 minutes. Remove from heat to let cool slightly.
In a large bowl whisk eggs, milk, Parmesan cheese, salt, and pepper until combined.
Stir in the cooled spinach mixture. Add crumbled feta and gently mix.
Pour mixture into the prepared dish and spread evenly.
Bake for 30-35 minutes until set and golden on top.
Remove and let quiche cool a few minutes before slicing and serving.
Notes
Be sure to grease your pie dish well so that the quiche doesn’t stick. Make ahead by prepping the mixture the night before and refrigerating until ready to bake.
