Ingredients
  

  • 1 lb chicken breast, cooked and shredded
  • 6 slices ham, chopped
  • 1 cup Swiss cheese, shredded
  • 3 cups chicken broth
  • 1 cup heavy cream Can substitute half-and-half for a lighter version.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • 1 tablespoon all-purpose flour Optional for thickening.
  • fresh parsley, chopped For garnish, optional.

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the chopped ham to the pot and cook for 3-4 minutes until slightly browned.
  • Sprinkle in the flour (if using) and stir well to coat the ingredients. Cook for another minute to eliminate the raw flour taste.
  • Pour in the chicken broth gradually, stirring constantly to prevent lumps from forming.
  • Add the cooked, shredded chicken and dried thyme. Season with salt and pepper to taste. Bring the mixture to a simmer and let cook for about 10 minutes.
  • Reduce the heat to low and stir in the heavy cream. Allow the soup to heat through, but do not let it boil.
  • Add the shredded Swiss cheese to the pot, stirring until melted and fully incorporated into the soup.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley if desired.

Notes

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently on the stove.
For a lighter version, substitute half-and-half for heavy cream or use low-fat cheese.
To add more vegetables, consider adding diced carrots or celery along with the onions.
