Ingredients
  

  • 4 pieces boneless, skinless chicken breasts Approximately 1.5 lbs total.
  • 8 oz cream cheese Softened.
  • 8 slices bacon Cooked and crumbled.
  • 1 cup crushed Doritos
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • as needed spray cooking spray

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the softened cream cheese, crumbled bacon, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  • Place the chicken breasts on a cutting board and slice each one horizontally, creating a pocket for the filling. Be careful not to cut all the way through.
  • Stuff each chicken breast with the cream cheese and bacon mixture, using a spoon to fill them generously.
  • Secure the openings with toothpicks if needed.
  • Spray a baking dish with cooking spray and place the stuffed chicken breasts in the dish.
  • Pour the crushed Doritos over the top of the chicken breasts, ensuring they are well-coated.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let rest for a few minutes before serving. If using toothpicks, remove them before serving.

Notes

Feel free to substitute the bacon with turkey bacon for a lighter option.
This dish pairs well with a side of roasted vegetables or a fresh salad.
Leftover stuffed chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
