Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 piece lemon for juice and wedges
  • optional fresh parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and black pepper. Stir until well mixed.
  • Rub the spice mixture all over the chicken thighs, ensuring they are fully coated.
  • Place the seasoned chicken thighs in a baking dish, skin side up. Squeeze the juice of half the lemon over the chicken and place the lemon halves in the dish.
  • Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  • Remove the chicken from the oven and let it rest for 5 minutes before serving.
  • Garnish with fresh parsley and serve with lemon wedges on the side if desired.

Notes

For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking.
This dish pairs well with steamed vegetables or a fresh salad.
The marinade can be prepared a day in advance for deeper flavor.
