- 4 pieces bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 piece lemon for juice and wedges
- optional fresh parsley for garnish
Preheat the oven to 400°F (200°C).
In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and black pepper. Stir until well mixed.
Rub the spice mixture all over the chicken thighs, ensuring they are fully coated.
Place the seasoned chicken thighs in a baking dish, skin side up. Squeeze the juice of half the lemon over the chicken and place the lemon halves in the dish.
Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
Remove the chicken from the oven and let it rest for 5 minutes before serving.
Garnish with fresh parsley and serve with lemon wedges on the side if desired.
For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking.
This dish pairs well with steamed vegetables or a fresh salad.
The marinade can be prepared a day in advance for deeper flavor.
