  • 8 slices Soft white bread fresh and soft for best texture
  • 100 g Cream cheese smooth and creamy
  • 1 English cucumber thinly sliced
  • cup Light mayonnaise adds creaminess
  • 1 teaspoon Dried dill for herby flavor
  • Salt and pepper to taste

  • Grab a small bowl and mix together cream cheese, mayonnaise, dried dill, salt, and pepper till it's smooth and creamy. Don’t worry about getting it perfect – totally fine if it's a little chunky.
  • Spread the cream cheese mixture evenly over one side of each bread slice. The thicker, the better if you ask me.
  • Lay thin cucumber slices over half of the bread slices. Try not to overlap too much or sandwiches get soggy fast.
  • Cover with the remaining bread slices to make sandwiches, cream cheese side down. You just wanna gently press so it sticks together but no squashing.
  • If you like, trim the crusts for a neater look and cut sandwiches into halves or quarters – perfect for sharing or snacking.
  • Serve ‘em right away or chuck in the fridge till you're ready to chow down. They’re good cold or at room temp, just how you like.

Notes

Use soft, fresh bread for best results. Pat cucumbers dry before adding to prevent sogginess. For more traditional flavor, substitute butter for cream cheese and mayo.
