Make sure that the sweet potato is diced small enough. If the chunks are too big, they will require longer cooking time. Slice the sausage when it’s still partially frozen to make it easier to cut. If the sausage is too soft, the sausage will start to come out of the casing when cutting it into pieces. It’s much easier to cut when it’s firm. You can also leave the sausages whole if short on time. You can purchase pre-chopped broccoli florets and sweet potato to save time chopping if tight on time. If I’m in a rush, sometimes I don’t even measure out the olive oil and spices; just sprinkle it on until the sausage and veggies are well coated.
