Ingredients
  

  • 2.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup unsalted butter, softened 2 sticks
  • 1.5 cups white sugar
  • 1 each egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract optional
  • 0.5 teaspoon salt
  • 0.75 cup granulated sugar for rolling

Instructions
 

  • Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or a silicone baking mat.
  • In a small bowl, mix the flour, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and the 1 ½ cups of sugar using an electric mixer or whisk until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  • Roll the dough into balls about 1 inch in size, then roll each ball in the reserved ¾ cup of granulated sugar to coat.
  • Place the coated dough balls on the prepared baking sheet, leaving enough space between each cookie for spreading.
  • Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

You can add sprinkles or colored sugar on top of the cookies before baking for a festive touch.
Store cookies in an airtight container at room temperature for up to one week or freeze for longer storage.
