Begin by cutting the watermelon into 1-inch cubes. You should have about 4 cups of watermelon cubes.
Crumble the feta cheese into small pieces to have approximately 1 cup ready for skewering.
Take your skewers and thread a cube of watermelon, followed by a piece of feta cheese, and then a mint leaf. Repeat this pattern until the skewer is filled, leaving a little space at both ends. You can fit about 3-4 pieces on each skewer.
Once all the skewers are assembled, place them on a serving platter.
Drizzle the balsamic glaze over the skewers and sprinkle with salt and black pepper to taste.
Serve immediately, or refrigerate until ready to serve.
