- 2 cans white beans e.g., cannellini or great northern, drained and rinsed
- 1 can fire-roasted diced tomatoes
- 1 medium onion diced
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika

- 2 tablespoons olive oil
- to garnish fresh parsley chopped
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the diced onion and sauté for about 5 minutes, or until the onion is softened and translucent.
