  • 2 cups Minute Rice (brown preferred)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water measured with empty soup can
  • 1 tablespoon butter
  • 1 envelope Lipton Onion Soup mix

  • Preheat your oven to 350°F.
  • Butter up a 9x13 inch baking dish to prevent sticking.
  • Lay out the chicken breasts evenly in the buttered dish, no overlapping.
  • In a large bowl, mix cream of chicken soup, cream of mushroom soup, water, butter, Lipton Onion Soup mix, and Minute Rice until the rice is well coated and butter melted.
  • Pour the soup and rice mixture over the chicken breasts, spreading evenly.
  • Cover the dish tightly with aluminum foil to trap steam.
  • Bake covered for 45 minutes, then remove foil.
  • Bake uncovered for another 10-15 minutes until chicken is cooked through and rice is tender.
  • Let the dish stand for 5 minutes before serving.

Notes

Use an empty soup can to measure water for convenience. Butter the baking dish while preheating for easy cleanup. Don't overmix the rice mixture to avoid clumping. Prep side dishes ahead to save time. Leftovers keep well refrigerated for up to 4 days or frozen for 1-2 months.
