In a pressure cooker, cook diced bacon on medium heat until crispy, about 5 to 7 minutes.
Remove bacon and set aside. Keep the bacon fat in the pot to cook the vegetables.
Add diced onion, minced garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes, stirring occasionally.
Stir in the lentils, salt, pepper, thyme, and oregano. Mix well to coat the lentils with flavor.
Add chicken stock and water to cover the lentils by a couple of inches. Add bay leaves and potatoes on top.
Secure the lid and cook on high pressure for 15 minutes. Let pressure release naturally for 10 minutes, then perform a quick release.
Open lid, stir in reserved bacon, red wine vinegar, and parsley. Serve.
Notes
Serve with some crusty bread for a complete meal.
