FRENCH LENTIL SOUP WITH BACON

  • 0.5 pound bacon diced
  • 1 large sweet onion diced
  • 8 cloves garlic minced
  • 3 carrots diced
  • 3 stalks celery diced
  • 1 cup French Le Puy lentils rinsed and drained
  • 1 tablespoon kosher salt or to taste
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 2 bay leaves
  • 4 cups low sodium chicken stock
  • 2 cups water
  • 2 russet potatoes peeled and chopped
  • 2 tablespoons red wine vinegar
  • 0.25 cup chopped fresh parsley

  • In a pressure cooker, cook diced bacon on medium heat until crispy, about 5 to 7 minutes.
  • Remove bacon and set aside. Keep the bacon fat in the pot to cook the vegetables.
  • Add diced onion, minced garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes, stirring occasionally.
  • Stir in the lentils, salt, pepper, thyme, and oregano. Mix well to coat the lentils with flavor.
  • Add chicken stock and water to cover the lentils by a couple of inches. Add bay leaves and potatoes on top.
  • Secure the lid and cook on high pressure for 15 minutes. Let pressure release naturally for 10 minutes, then perform a quick release.
  • Open lid, stir in reserved bacon, red wine vinegar, and parsley. Serve.

Notes

Serve with some crusty bread for a complete meal.
