In the blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, garlic, basil, and parsley.
Add the chilled vegetable broth, red wine vinegar, and extra virgin olive oil to the mixture. Blend until smooth and creamy, adjusting the consistency with more broth if needed.
Season with salt and freshly ground black pepper to taste. Blend briefly to combine.
Transfer the soup to a mixing bowl. Cover and refrigerate for at least 1 hour to chill and allow the flavors to meld.
Before serving, taste and adjust seasoning if necessary. Ladle the gazpacho into serving bowls and garnish with extra basil leaves.
For an extra touch, serve with a drizzle of olive oil on top of the gazpacho.
