Ingredients
  

  • 2 pieces ripe bananas
  • 1 cup peanut butter
  • 1 cup Greek yogurt plain or vanilla
  • 1 tablespoon honey optional
  • 1 teaspoon vanilla extract optional
  • dash salt optional

Instructions
 

  • Peel the bananas and slice them into ½ inch thick rounds.
  • Line your baking sheet with parchment paper to prevent sticking.
  • In a mixing bowl, combine the peanut butter and a dash of salt, stirring until smooth. If desired, add honey and vanilla extract for additional flavor.
  • Take a slice of banana, scoop a small amount of the peanut butter mixture onto one side, and place another banana slice on top to make a sandwich. Repeat this process until all the banana slices are used.
  • Once the banana sandwiches are assembled, dip each one into the Greek yogurt, making sure they are evenly coated.
  • Place the yogurt-coated banana bites back onto the lined baking sheet.
  • Freeze for about 2-3 hours, or until the yogurt is firm and the bites are frozen solid.
  • Once frozen, transfer the bites to a freezer-safe container for storage.

Notes

These bites can be stored in the freezer for up to a month.
Feel free to customize by adding toppings such as crushed nuts or chocolate chips before freezing.
For a vegan version, you can substitute peanut butter with almond butter and use a dairy-free yogurt.
