  • 2-4 petite steaks about 1 inch thick
  • Salt and pepper to taste
  • Garlic powder to taste
  • 1 tablespoon Olive oil
  • 2-4 pounds Baby potatoes diced
  • 2-6 tablespoons Salted butter soft enough to mash with fork
  • 2 teaspoons Minced garlic fresh preferred
  • 1 teaspoon Dried Italian herb blend
  • 1 teaspoon Chopped fresh thyme
  • 1 teaspoon Chopped fresh parsley

  • Take your steaks and season them well with salt, pepper, and garlic powder all over. Set them aside.
  • Heat olive oil in a big skillet over medium heat. Toss in diced baby potatoes and cook, stirring until golden and tender (15–20 minutes).
  • Add 2 tablespoons butter, minced garlic, Italian herbs, thyme, and parsley to the potatoes. Stir to coat. Then remove potatoes and set aside.
  • Increase heat to medium-high. Sear steaks in same skillet, about 3–4 minutes on each side, to your doneness preference.
  • During the last minute of steak cooking, add a tablespoon butter on each steak and let melt in.
  • Return potatoes to skillet, and heat through gently while mixing with steak juices and butter.
  • Serve steaks topped with garlic and herb butter, alongside sautéed potatoes.

Notes

Use pre-minced garlic if you don’t have fresh. Skip peeling potatoes for a rustic dish. Freeze leftovers or turn into breakfast hash the next day.
