Ingredients
  

  • 1 bunch garlic scapes about 150g, chopped into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1 piece bell pepper sliced, any color
  • 1 piece carrot julienned
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • salt and pepper to taste
  • 1 teaspoon sesame seeds optional for garnish

Instructions
 

  • Prepare the garlic scapes by washing them thoroughly. Remove the tough ends and chop them into 1-inch pieces.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chopped garlic scapes, bell pepper, and carrot to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.
  • Pour in the soy sauce, sesame oil, and rice vinegar. Stir well to coat the vegetables in the sauce and cook for another 2-3 minutes.
  • Season with salt and pepper to taste. Make sure to adjust the seasoning based on your preference.
  • Remove from heat and transfer the stir-fry to a serving dish. Garnish with sesame seeds if desired.
  • Feel free to add other vegetables like broccoli or snap peas for added nutrition and color.
  • This stir-fry can be easily made vegan or vegetarian by pairing it with tofu or served as is.
