- 8 ounces pasta Such as penne or farfalle.
- 1 cup cherry tomatoes Halved.
- 1 cup cucumber Diced.
- ½ cup red onion Finely chopped.
- ½ cup Kalamata olives Pitted and sliced.
- 1 cup feta cheese Crumbled.
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- to taste salt
- to taste pepper
- Fresh parsley For garnish (optional).
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
