Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cups chicken broth
  • 2 cans (4 oz each) diced green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup chopped cilantro (for garnish)
  • 1 lime cut into wedges (for serving)

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook for about 5 minutes, until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the diced chicken breasts to the pot and cook until browned on all sides, about 5-7 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Stir in the diced green chilies, black beans, corn, cumin, chili powder, salt, and pepper.
  • Continue to simmer the soup for about 20 minutes, allowing the flavors to meld and the chicken to cook through.
  • Taste and adjust seasoning as desired.
  • Ladle the soup into bowls, and garnish with chopped cilantro. Serve with lime wedges on the side.

Notes

For a spicier version, add a diced jalapeƱo during the initial cooking of the onions.
This soup freezes well. Store in airtight containers for up to 3 months. Reheat on the stovetop or in the microwave when ready to serve.
You can substitute chicken breasts with rotisserie chicken for a quicker preparation.
