Ingredients
  

  • 1 lb large shrimp, peeled and deveined About 450g.
  • 2 cups bell peppers, sliced About 300g.
  • 1 cup zucchini, sliced About 150g.
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon sliced (for garnish)
  • Fresh parsley, chopped for garnish

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a large mixing bowl, combine the shrimp, bell peppers, zucchini, olive oil, garlic, smoked paprika, lemon zest, salt, and black pepper. Toss until everything is evenly coated.
  • Cut four pieces of aluminum foil, about 12 inches long each. Create a bowl shape by folding the edges of the foil upwards to hold in the shrimp mixture.
  • Divide the shrimp and vegetable mixture evenly among the four pieces of foil.
  • Fold the foil over the shrimp and vegetables, sealing the edges securely to create a packet.
  • Place the foil packets on the grill and cook for about 15 minutes, flipping the packets halfway through to ensure even cooking.
  • Carefully remove the packets from the grill and let them sit for a minute before opening, as steam will escape.
  • Serve the shrimp and vegetables directly from the foil, garnished with lemon slices and chopped parsley.

Notes

Feel free to customize the vegetables based on your preference or seasonal availability.
Adjust the seasoning to your taste; you can add chili flakes for a spicy kick.
