Equipment

  • 1 non-stick skillet or frying pan
  • 1 spatula
  • 1 cutting board
  • 1 measuring cups and spoons

Ingredients
  

  • 4 slices bread Your choice, such as sourdough or whole grain.
  • 1 cup fresh spinach Chopped.
  • ½ cup ricotta cheese
  • ¼ cup sun-dried tomatoes Chopped.
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil or butter
  • to taste salt
  • to taste pepper

Instructions
 

  • In a mixing bowl, combine the ricotta cheese, chopped sun-dried tomatoes, and chopped spinach. Season with salt and pepper. Blend until well mixed.
  • Lay two slices of bread on a cutting board. Spread half of the ricotta mixture on each slice. Top each with half of the shredded mozzarella.
  • Place the remaining slices of bread on top to form two sandwiches.
  • Heat the olive oil or butter in a non-stick skillet over medium heat. Once hot, carefully place the sandwiches in the skillet.
  • Cook each sandwich for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until the other side is also golden and the cheese has melted.
  • Remove the sandwiches from the skillet and let them cool for a minute. Slice in half and serve warm.

Notes

You can add other ingredients such as garlic or fresh herbs to enhance the flavor.
For a healthier option, consider using whole grain bread or low-fat cheese.
