- 4 slices bread Your choice, such as sourdough or whole grain.
- 1 cup fresh spinach Chopped.
- ½ cup ricotta cheese
- ¼ cup sun-dried tomatoes Chopped.
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil or butter
- to taste salt
- to taste pepper
In a mixing bowl, combine the ricotta cheese, chopped sun-dried tomatoes, and chopped spinach. Season with salt and pepper. Blend until well mixed.
Lay two slices of bread on a cutting board. Spread half of the ricotta mixture on each slice. Top each with half of the shredded mozzarella.
Place the remaining slices of bread on top to form two sandwiches.
Heat the olive oil or butter in a non-stick skillet over medium heat. Once hot, carefully place the sandwiches in the skillet.
Cook each sandwich for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until the other side is also golden and the cheese has melted.
Remove the sandwiches from the skillet and let them cool for a minute. Slice in half and serve warm.
